Malpua
Ingredients:
  • Flour(maida) 1/4 kg
  • Baking powder -A pinch
  • Milk 1 cup
  • Fennel seeds 1 tsp
  • whole black pepper 3-4
  • oil for frying
  • Sugar 1/2 kg
  • water 1 and 1/2 cup
Method:
  • Sieve maida,add a pinch of baking powder,fennel seeds,whole black pepper
  • Mix milk little at a time,mixing the batter properly,till the batter reaches pouring consistency
  • Meanwhile make sugar syrup by adding sugar in one and half cup water and heating it,till all the sugar dissolves
  • Heat oil,in a frying pan ,pour little batter with spoon or laddle ,and fry it gently till golden brown
  • Put the fried malpua in syrup and take them out after a while
  • Serve them with seera or curd

Recepie for making ferment for making doli a type of poori? The trick lies in making the ferment for making the dough. 7 spices - cloves, cinnamon, big cardamom, saunf, chana dal, poppy seeds and one more - are used to making the ferment with water. It is left undisturbed for more than 24 hours which is used in making the dough which is again allowed to stand and raise and then pooris are made by stuffing boiled yellow dal flattening on hand and and deep fried.
