Aloo tikki
Ingredients:
  • Potatoes 2
  • Green chillies 2
  • Cummin seeds 1/2 tsp
  • Bread slices 3
  • Salt to taste
  • coriander leaves
  • Oil for frying
Method:
  • Boil potatoes,peel them,mash them slightly
  • Grind bread slices,along with green chillies in mixer grinder to obtain crumbs of bread
  • Add it in mashed potatoes,also add salt,cummin seeds,coriander leaves and mash them together properly
  • Take small portion of this mixture and make a tikki
  • Fry it in hot oil till crisp golden brown
  • NOTE:first fry one tikki,if it cracks then either the oil is not properly hot or you need to add more bread crumbs in the mixture
  • Serve hot with tomato ketchup or chutney of your choice

Recepie for making ferment for making doli a type of poori? The trick lies in making the ferment for making the dough. 7 spices - cloves, cinnamon, big cardamom, saunf, chana dal, poppy seeds and one more - are used to making the ferment with water. It is left undisturbed for more than 24 hours which is used in making the dough which is again allowed to stand and raise and then pooris are made by stuffing boiled yellow dal flattening on hand and and deep fried.
