Aloo pakora
The base of all type of pakodas remain almost same,but use of different vegetables make this snack a favourite of all young and old
ALOO PAKORAS
For basic batter
  • 1 small cup gramflour
  • Salt to taste
  • Red chilli powder as per taste
  • A pinch of baking soda
  • Water

Other ingredients

  • OIl for frying
  • 1 large potato(cut in thin slices as in wafers)
Method
  • Peel and cut potato ,in thin slices, wash them to remove the starch and add salt.
  • Keep aside for 5 min.wash again
  • Make a basic flour batter ,by mixing gramflour,salt,red chilly powder,soda and water.its consistency should be thick enough to coat potato pieces
  • Add 2 tsp of hot oil in batter to make pakoras more crisp
  • Now take a slice of potato,dip in batter and gently put it in hot oil for frying
  • Repeat with all slices
  • Turn them gently ,and fry them on medium flame,so as to cook the potato,remove them when almost done,and put them back again in hot oil frying for few seconds till the pakoras become crisp light golden colour.
  • Serve them piping hot with your favourite chutney or ketchup

Recepie for making ferment for making doli a type of poori? The trick lies in making the ferment for making the dough. 7 spices - cloves, cinnamon, big cardamom, saunf, chana dal, poppy seeds and one more - are used to making the ferment with water. It is left undisturbed for more than 24 hours which is used in making the dough which is again allowed to stand and raise and then pooris are made by stuffing boiled yellow dal flattening on hand and and deep fried.
